摘要
高校擴招和經(jīng)濟快速發(fā)展對整個高校的經(jīng)濟環(huán)境產(chǎn)生了巨大影響,經(jīng)濟水平的提升使得高校學生的消費變得越加追求品質(zhì)和多元化,在這種環(huán)境下,高校食堂都面臨新的發(fā)展機遇和挑戰(zhàn)。布局優(yōu)化作為高校食堂規(guī)劃和管理的一部分,直接影響到食堂的運營效率和就餐滿意度,采用恰當?shù)牟季址椒梢越档褪程眠\營成本,提高食堂運營效率。然而,許多食堂目前內(nèi)部區(qū)域布局方法不合理、桌椅閑置率高、購餐過程擁擠不堪、購餐效率低下,食堂服務無法滿足多元化的就餐需求。
本文在介紹相關理論的基礎上,分析了江蘇大學食堂現(xiàn)狀及存在問題。本文第一部分介紹了論文的研究背景、目的、內(nèi)容和研究方法;第二部分對設施規(guī)劃相關的基本概念作了闡述,包括實施規(guī)劃、物流、物流管理等,并闡述了高校食堂布局優(yōu)化在國內(nèi)外的研究現(xiàn)狀;第三部分對高校食堂發(fā)展現(xiàn)狀做了相關簡介,針對江蘇大學食堂現(xiàn)狀進行了分析,主要包括高校食堂的特點、高校食堂的類型、高校食堂桌椅類型及布置、存在的問題等方面;第四部分則針對第三部分中找出的問題分別研究,并提出了相關的改進方案,高食堂空間利用率,優(yōu)化餐、廚、衛(wèi)區(qū)域布局,調(diào)整桌椅組合方式和布置方法;第五部分是對本文的總結(jié)和展望。
本文研究以江蘇大學為例,提出了高校食堂在餐、廚、衛(wèi)區(qū)域布局和就餐區(qū)桌椅布置的優(yōu)化方案,提高了江蘇大學食堂運營效率效率。其研究方法可適當推廣其它高校食堂,但必須根據(jù)每個高校自身不同的特性作相關的調(diào)整,從而找到適合自身的、有效的高校食堂布局優(yōu)化方案。

Abstract
Rapid economic development in college enrollment and universities throughout the economic environment had a tremendous impact,enhance the economic level of consumption makes college students become increasingly pursuit of quality and diversity,in this environment,college canteens are facing new opportunities for development and challenges.Layout optimization as part of the planning and management of the college canteen,a direct impact on the operational efficiency of the cafeteria and dining satisfaction,using appropriate layout method can reduce the canteen operating costs,improve operational efficiency cafeteria.However,many dining area inside the current layout method is unreasonable、chairs idle rate、share meals process overcrowded , inefficient purchase meals,canteen service can not meet the diverse dining needs.
This paper introduced the theory based on the analysis of the current situation and problems of the cafeteria, Jiangsu University. The first part introduces the background、objectives、contents and methods papers;Second part of the basic concepts related to facilities planning elaborated,including the implementation of planning、logistics、logistics management and describes the university cafeteria layout optimization in the domestic Research Status outside;Third part of the current development of the relevant profile college canteen,canteen for the status quo , Jiangsu University, analyzed,including the characteristics of college canteen,the type of college cafeteria,college cafeteria tables and chairs and so arranged problems etc;Fourth part for the problems identified in Part III,respectively,and put forward relevant improvement program,canteen space utilization,optimize dining room、kitchen、sanitary regional distribution,combination and arrangement of tables and chairs adjustment methods;The fifth part of this paper is a summary and outlook.
In this paper,Jiangsu University,for example,proposed a university cafeteria in dining room、kitchen、sanitary regional distribution and regional distribution Guardian tables and chairs arranged to improve the operational efficiency of Jiangsu University canteen efficiency.It’s research methods may be appropriate to promote other college canteens,but must be adjusted according to each university related their different characteristics.In order to find their own suitable and effective college canteen layout optimization.

Abstract
